Mincemeat Cookie Tart

My first attempt on making these cookie tart. I have a jar of mincemeat sitting in my pantry for sometime, so I thought I try making some cookie. I scooped out the mincemeat onto a skillet and seared in low heat them and added some sugar. I was hopefully that sugar will help thicken or dry up the mincemeat texture as good easy filling to this cookie dough.

Ingredient for filling:

Jar of mincemeat.
1/4 cup of sugar.

Ingredient for the pastry.

2 cup flour
2 Tbsp corn flour
1/6 cup of sugar
2 stick of margarine
1 egg yolk
1 tsp baking powder.

2 cup flour
1/4 cop water

1 egg - for egg wash

Direction:

Oil based dough:
In a blender, beat sugar and margarine. Add in egg yolk to incorporate.
In separate bowl, mix together flour, corn flour and baking powder.
Gradually, fold a little of flour mixture at a time to margarine.
Mix and knead until all flour blend together to form a nice dough.
Set dough in refrigerator at least 15 minutes or more.

Water based dough
Add small amount of water add a time to flour, mix and knead till dough allow to pull and stretch.

Preheat Oven at 350 F
Line out parchment paper over baking pan.

Work with a small badge at a time, tear out a small fist size water dough and another oil based fist size dough. Roll out water dough, put oil based on middle of rolled out water dough. Fold together and press out flat, do this several times ( 3 to 5 times). 
Roll out flat the dough, cut out strip of 1  1/4 inch wide. Cut strip to 3 inch long. 
On each 3 inch strip, add 1/2 tsp of filling and roll up filling completely. 
Arrange individual log on parchment papered pan, (spreading an inch apart from each other of the log cookie).

Brush with egg wash over each cookie. (optional)
Bake in preheated oven approv 20-25 mins (or till golden).
Leave to cool on a wire rack and store cookies in containers.





Taste pretty wonderful right off the oven.

Lovely Purple Tulips simply beautiful whether they are freshly cut or fading away.
The camera loves them, they are very easy on the eyes, how could you not love these Tulips!... I love them.

Freshly Cut, I didn't do a very job in arranging the bouquet on the vase but they did fine.

Birthday Sizzle.

Today is my birthday and it is a BIG Sizzle!! Here are my birthday cake and goodies!!! Delicious carrot cake plastered with walnuts and  whipped cream cheese icing. Then it was topped with raspberries and thinly sliced white chocolate. Finger licking good!

We went on a nearly 3 hour hike at Billy Goat Trail A off the tow path at Great Falls, Maryland.It is beautiful and scary!! We hiked and climbed on several rocky hills that were hard for everyone to climb. I want to highlight one very steep hill which was pretty challenging and scary too. I took my time crawling down the rocks like a spider. You can see from the picture that the rocks had a steep downward slant..whew... I did it!

Terry, my sweetheart took me to Todai Seafood and Sushi buffet restaurant for my special birthday treat at Fair Oaks Mall. This place serves some pretty good food ... so many different kinds of sushi and seafood prepared in so many different ways.. and desserts - - chocolate fondue to crepe made to order at the dessert counter...yummy!  ... but beware of all those Asians fighting their way to be in front of you to get their food first. It doesn't matter if you are scooping first. It is like Costco in Gaithersburg giving away free goodies at lunch time. Everyone wants some! :) And by these photo, you can see why!

What a special and beautiful way to spend my birthday... Thank you, dear, Terry!!!!

Wonderful bouquet

These roses were gorgeous and a sizzle a week ago.

They have been slowly and surely in the process to fizzle off .. but they still make wonderful air dried bouquet. I tie and bunch them together and hang them upside down on a hook meant for hanging plants in the kitchen window.. gives the kitchen an extra hint of decor.

Nice Sisters at the Yard Sale

Saturday 11:15ish am, I decided to take one mile stroll to this yard sale that was supposed to end in a few minutes ...at noon. The hurricane was coming, but I didn't want to miss out if there was good deal especially towards of the yard sale, so hurricane or not , I was going. Actually, the sale had ended a little early because of the approaching storm. I had walked a mile to get here with rain drizzling, so I was very disappointed. I decided to knock on the door to see if they were still interested in selling anything. I was greeted by a very nice couple of sisters. One was moving , and the other was helping her sister sell what she could. They were happy to let me in to see what they had. I was excited to find a complete set of Mikasa dish setting for 4.
The dishes were like new and very nice and you wouldn't believe how much the asking price was.. $5 which I would had to pay easily $40 or $60 if I got them from the store. I also picked up a very old cute step stool.. just what I needed, petite that I am I can used that practically anywhere in the house or use that as a plant stand. But the trick then was how was I supposed to carry the dish set and step stool with umbrella walking one mile home???. and it was time to go. Right then the sky opened  and the rain started coming down hard . It was too hard  for me to walk in. I had my boyfriend's phone, so I was ready to call him to pick me up and give me a ride home. But instead the nice sisters offered me a ride themselves. I really enjoyed this yard sale (and most of my yard sale hunting) , especially when I get to  meet such nice people and get such good deals. Sat's yard sale was a big Sizzle for me!!!
